Evergreen is the product that seems to be generally recommended for consortia, but there is very little information on UK-specific installations. I gather the Scottish consortium (Stirling and East Dunbartonshire) has recently gone live. Does anyone know if the implementation has proved to be smooth or otherwise?

Good question. The Advanced Search function of Marshall Breeding's lib-web-cats (free registration required) allows one to search by current automation system and country. It shows that there is one installation -- Stirling and East Dunbartonshire Library Consortium -- using PTFS Europe for support. I don't know how good the data is for the U.K., so there might be more.

I notice that the current releases are not included for Evergreen and the most recent releases have pretty dramatically changed the product.

Version 2.1.1 was released on 11/16/11
Version 2.0.10 was released on 10/04/11

...it just takes someone to put in the data. (http://foss4lib.org/node/add/release) Some information has been put in to start things going, but one could say it takes a community to build a registry.
